Ingredients
300g chopped tomatoes
1 small red onion, chopped
1 garlic clove, chopped
½ tsp sugar
juice 1 lime
handful coriander, stalks and leaves, chopped
Preparation
Tip all the ingredients into a blender or food processor with a generous grinding of pepper and salt, if you like. Pulse until you get a chunky, frothy soup.
Serve straight away or chill until needed.
