Ingredients

30 small tomatillos or,

18 regular size

1/2 white medium onion chopped

2 fresh jalapeños chopped

1 garlic clove

1/2 buch fresh cilantro

2 T olive oil

salt to taste

pinch of baking soda *

Preparation

Peel and rinse the tomatillos, boiled them until soft (just the tomatillos), drain the water off and blend them with the chopped onion, jalapeños, garlic and cilantro, do not add any water. On a medium size pot a heat the oil and simmer the Salsa for 20 minutes, add the salt to your taste and the pinch of *baking soda, mix well and turn off the heat.

  • The Baking Soda takes away the acidity of the Tomatillos.
