Ingredients
1 or 2 Anaheim Peppers, roasted
2 large tomatos, roasted, seeds removed
2 to 3 cloves fresh garlic, minced
1/2 bunch fresh parlsey, chopped
1 red onion, chopped fine
juice of two limes
Preparation
Chop roasted peppers, removing veins and seeds. Chop tomatoes. Mix onion and lime juice, let stand a couple of minutes. Add remaining ingredients. Chill. Can be kept up to two weeks.
