4 sheets matzo 

Extra-virgin olive oil 

Flaky sea salt, such as Jacobsen 

Freshly ground pepper 

Dried thyme and ground sumac (optional) 

Preparation

Brush matzo with extra-virgin olive oil; season with sea salt, pepper, and spices. Bake on a rimmed baking sheet at 450°F until warmed through, 3 to 4 minutes.
