Ingredients
1 1/2 cups flaked cooked salt cod
1 1/2 cups cooked mashed potatoes
1/2 cup grated onion
2 large eggs
salt and fresh ground black pepper
bacon fat or a mixture of butter and oil for sauteing
flour or unseasoned bread crumbs for dredging
Preparation
Mix together the fish, potatoes, onion, eggs, salt and pepper. Cover the bottom of a 12-inch skillet with fat to the depth of at least 1/8 inch. Heat over high heat until the oil shimmers. Shape the salt code mixture into cakes or small balls; dredge them in the flour, then fry until lightly browned all over, 3-4 minutes per side. Drain briefly on paper towels then serve with lemon wedges.
