Ingredients
4 veal scallops
2 tbsp. lemon juice
salt and pepper
1 tbsp.chopped fresh sage leaves
4 slices prosciutto
2 oz. butter
3 tbsp. dry white wine
Preparation
sprinkle lemon on veal and set aside for 30 minutes. pat veal dry and salt and pepper them and half of the sage. place a slice of prosciutto on veal and secure w/ toothpick. melt butter and add rest of sage and stir for 1 minute. add veal and cook 3-4 minutes per side. add wine and cook 2 minutes.
