Ingredients

1 bunch Large Fresh Sage Leaves, washed and patted dry

Olive Oil (about 1" in pan)

Batter:

1 Cup Beer

2/3 Cup All-Purpose Flour

Salt and Pepper to taste

1 Egg white at room temp.

Preparation

Combine beer, flour, salt and pepper until smooth. Let stand about 15 min. Beat egg white until stiff, fold into batter. Dip each leaf into batter, lightly coating each side and immediately drop into hot oil. Take out as soon as golden brown and drain on paper towels. (3-4 min.)
