Ingredients

2 pound of raw peanuts

1/3 cup kosher salt

6 cups water

2 bird’s eye chili peppers (or other small, hot chili peppers)

3 star anise

2 cloves garlic

Preparation

Rinse the peanuts under water. Place all the ingredients in a pot and bring water to a rolling boil. Cover and continue to boil for 4-5 hours (or longer if you want them softer).
