Ingredients

Lots of boneless chicken. Thighs stay moister. Cut thicker pieces of

thighs in half across it’s width, and spread open (like butterflying a

pork shop) so the chicken is all about the same thickness.

Mix together:

7 Cloves Garlic, Crushed

1 Thumb Ginger, Chopped (about 2.5 Tbl)

¾ C/ Sugar

1 C Soy Sauce

3Tbl Lemon Juice

Mix all but garlic into chicken and knead like bread (!!?)

Add:

Garlic

1.5 T Pepper

½ C Sesame Oil

½ C. Sugar

Sauce:

Boil one small jar of commercial BBQ sauce

1 tsp Korean hot pepper

(to taste) and about

¼ cup sugar.

Preparation

Marinate chicken overnight.

Grill outside on high for about 4 minutes per side.

Boil sauce ingredients about 3 minutes.

Spoon about 1 tsp of sauce over each piece of chicken as it comes off the grill. The sauce should be used very sparingly so it doesn’t overwhelm the chicken.
