Ingredients

2 tablespoons oil

2/3 cup chopped onion

4 ounces drained, chopped green chilies

2/3 cup pearl barley

2 cups beef broth

1 15 ounch can pinto beans

1/2 cup shredded Monteray Jack cheese

Preparation

Heat oil in skillet ad onion and chilies. Saute three minutes. Add barley and broth. Cover and simmer 45 minutes.

Stir in beans and cheese and heat until beans are hot and cheese is melted.
