Ingredients
1 small onion red or white finely chopped
1 cup quinoa (rinsed if not pre-rinsed - a must to remove the bitter taste)
1.5 cups water or veggie broth
1 cup frozen or canned corn
1 red or green pepper - chopped small
1 jalapeno finely chopped (can be omitted if you don’t like spicy)
3-6 diced green onions
2 tbsp lime juice
1/2 or full bunch of cilantro
Preparation
- This step is not required but recommended in Cook’s Illustrated. Saute the onion. Add the quinoa stirring until lightly toasted. Add the water and cook for 15 min until water absorbed. fluff.
- In a bowl mix the other ingredients and toss.
- Add the quinoa, mix well. Season to taste with salt, pepper, tabasco.
