Ingredients

4 cups thinly sliced Apples

1/3 cup sugar

3 tsp cinnamon

3 cups flour

1 tbsp baking powder

1 tsp salt

2 cups sugar

1 cup corn or vegetable oil

4 eggs lightly beaten

¼ cup orange juice

1 tbsp vanilla

Preparation

Preheat oven 375

•Combine apples and 1/3 cup sugar & cinnamon set aside •Sift dry ingredients together in a bowl •Make a well in the centre and mix in eggs, orange juice and vanilla until well blended •Spoon 1/3 of batter into a a well greased tube or bunt pan •Arrange ½ of apple slices, drains of excess moisture in a ring on top of batter, take care not to have apples touching the sides of the pan •Spoon over 1/3 of batter, arrange remaining apples, top with remaining batter •Bake for 1 to 11/4 hours •Cool 15 minutes, remove from pan •Dust lightly with icing sugar •Serve warm or cool
