Ingredients

4 whole white mushrooms

1 tbsp fresh cilantro leaves finely chopped

2-3 large cloves of garlic

1 tsp red wine vinegar

1/4 of a fresh avocado

1/2 tsp salt

Preparation

  1. wash mushrooms and twist the stems out to remove as much as possible, leaving room to stuff
  2. chop up stems and keep a quarter cup, discard the rest
  3. combine chopped stems with cilantro
  4. grate or mince garlic into the mixture
  5. add a teaspoon of vinegar and mash slightly
  6. add avocado and mash into other ingredients until the avocado is smooth
  7. salt to taste, return stuffing to mushroom caps, garnish with cilantro leaves
