Ingredients
4 whole white mushrooms
1 tbsp fresh cilantro leaves finely chopped
2-3 large cloves of garlic
1 tsp red wine vinegar
1/4 of a fresh avocado
1/2 tsp salt
Preparation
- wash mushrooms and twist the stems out to remove as much as possible, leaving room to stuff
- chop up stems and keep a quarter cup, discard the rest
- combine chopped stems with cilantro
- grate or mince garlic into the mixture
- add a teaspoon of vinegar and mash slightly
- add avocado and mash into other ingredients until the avocado is smooth
- salt to taste, return stuffing to mushroom caps, garnish with cilantro leaves
