Ingredients
1 (boneless) Large beef roast
red wine to cover
1 Large, cut-up Onion
2 Cut-up Carrots
1 pint Heavy cream
2 bay leaves
2 Tblspns Whole Peppercorns
Preparation
Place beef roast in a stainless steel or plastic container and marinate the meat for five days, turning once daily. After 5 days remove the mead from the marinade and roast. Strain the marinade and add to the pan juices fro the gravy.
