Ingredients
2 tblsp olive oil
1 pound (3-4) links Hot Italian
sausage (you can use mild sausage if you like) cut into 1/4 inch rounds.
1 diced onion
4 cloves garlic diced
1 can beef broth with one can water
1 can chicken broth with one can water
1 can chick peas, rinsed and drained
1 can white kidney beans, rinsed and drained
1 large can (28 oz) diced tomatoes
2 cups small pasta - ditali or shells
Preparation
In dutch oven or large pot, on medium heat brown sausage in olive oil, add onion and cook until soft. Add garlic cook 30 seconds. Add soups with water, beans and tomatoes. Bring to boil. Reduce to simmer and cook 15 minutes. Bring back to a boil and add pasta, simmer until pasta is cooked.
