Ingredients

1 package orzo

3 tbsp olive oil

5 cloves garlic, chopped

1 lb hot Italian sausage, casings removed

1 onion, chopped

1 lb zucchini, 1/2 inch dice

1/2 cup sliced sun dried tomatoes

1/2 cup dry white wine

1/2 cup shredded fresh basil

fresh grated parmesan

Preparation

Cook orzo according to package directions.

Meanwhile, heat 3 tbsp olive oil in a large skillet over medium heat. Add garlic and sauté 2 minutes. Add sausage and cook, breaking up large pieces with a spoon. Cook until sausage is well browned. Set aside.

In same pan, cook onion, zucchini, and dried tomatoes, until excess moisture is evaporated from zucchini. Add wine, stirring constantly, and let totally evaporate. When wine is evaporated, stir in sausage, cooked orzo and basil and correct seasoning. Grate fresh parmesan over.
