Ingredients
1 lb of left-over Italian Sausage (poultry if fine, hot is best).
1 Tbs Olive Oil
1 Small Onion
2-3 Garlic Cloves, Diced
1 Pepper (Green or Red), I’ve even used left-over peppers & onions.
1 Large Can Whole Tomatoes
1 Medium Can of Diced Tomatoes
1 Medium Can of Tomato Paste
1 tsp Onion Powder
2 tsp Oregeno
1 tsp Basil
1/2 tsp Thyme
1/4 tsp Marjoram
1/4 tsp Crushed Rosemary
1/4 tsp Red Pepper
2 tsp brown sugar
1/4 tsp baking soda
Your Favorite Pasta
Preparation
Saute garlic, onions & peppers in a medium sized Dutch Oven with Olive Oil. I like to cut the onion & pepper in larger chunks. Allow them to get soft. Dice up the sausage and toss it in. Let the mixture heat up on medium heat.
Add tomato products. Add 1 - 2 cans of water with the paste. Mix Well.
Add spices & sugar. Bring to a boil & reduce heat. Add Baking Soda (sometimes a touch more of soda is needed to take away the bitterness).
Let simmer for 30 - 45 minutes. Heat up some pasta and go to town.
