Ingredients
2.5 lbs small Yukon Gold potatoes,
1 tsp salt
1 tsp olive oil
1 large onion, halved lengthwise & sliced
1 tsp sugar
1/2 tsp dried thyme
2 Tbs all purpose flour
1.5 C vegetable or mushroom broth
1/3 C red wine
1 Tbs soy sauce
8 oz soy “sausage” links cut into bite size pieces
1 C Milk
1 tsp butter
Preparation
- Bring L pot of water to a boil. Boil Potatoes until tender.
- Heat oil in saucepan over med-high heat. Add onion, sugar and thyme and cook, stirring often, until onion slices are golden. Stir in flour and cook stirring continuously. Add “sausage” to gravy and simmer until heated through.
- Dran and rinse potates: mash w/ potatoe masher. Add warm milk and butter and whip until fluffy. Add s & p to taste.
- serve mashed potatoes topped w/ gravy.
