Ingredients

10 Roma tomatoes

1/4 cup fresh basil, chopped

2 15 oz cans stewed tomatoes

2 tbls garlic, minced

1/2 cup olive oil

1/2 cup white wine

salt & pepper to taste

2 medium shallots, chopped

1 bunch scallions, chopped

2 lbs hot Italian sausage, sliced 1 inch thick

1 lb penne pasta

Parmesan for garnish

Preparation

Place all ingredients except sausage, pasta & Parmesan in a food processor & puree until smooth. Place puree into a large stockpot & add sausage. Cookover low heat for 1 hour, stirring frequently. Season to taste. Cook pasta according to package directions. Drain pasta & plate immediately. Top with sauce & garnish w/Parmesan.
