Ingredients

5-6 sausage links (mix of spicy and sweet italian)

1 onion

Goat cheese

1 lb. Champanelle Pasta

1 pack spinach leaves

Preparation

Sautee onion in olive oil Add sausage, break up while cooking, add spinach, cook down until spinach is cooked. In bowl add goat cheese and 3/4 cup water from pasta. Drain pasta - add to bowl. Add sausage/spinach mixture and toss until goat cheese is melted and evenly distributed.
