Ingredients
1 med chopped onion
2 cloves of minced garlic
large bunch of rainbow kale
juice of 1 lemon
2 tbsp olive oil
duck crackle or slice of diced bacon
a splash of dry white wine
salt and pepper to taste
Preparation
heat oil over medium heat in a heavy pan add duck or bacon and crisp. add onion and saute until translucent and add garlic and saute of a minute or two. add kale and let it wilt and add wine to help the wilting. salt and pepper to taste and add the lemon juice. Serve hot.
