Ingredients

2 tbs. Spanish Olive Oil

1/4 white onion, thinly sliced

2 cloves garlic, finely chopped

8-10 Cremini mushrooms, thinly sliced

1/4 C Dijon mustard

1/4 - 1/2 C of good quality cold Sake

1 bag baby spinach

Preparation

Heat olive oil in a large skillet Saute the white onion slices adding water as necessary till soft and slightly brown Add the mushrooms and garlic and a 1/4 C of water and saute over medium heat for 5 mins. Be careful not to brown the garlic. Next add the Dijon mustard and the Sake and emulsify. Let simmer for 5 mins. Add the spinach, pinch of salt and freshly ground black pepper and put a lid on it. Do not stir. After 3-5 mins. the spinach will be wilted and greatly reduced in volume. Toss it all up and serve hot.
