4 Ripe Bananas

Flour for dredging

3 tablespoons butter

2 tablespoons sugar plus more for serving

Fresh lemon juice

Preparation

Peel bananas and cut once crosswise and once lengthwise, so each banana is cut into four pieces. Heat the butter in a large, deep skillet over medium high heat.

Dredge the bananas in flour, shaking off excess. Wait for butter foam to subside, then add bananas to skillet. Cook, turning frequently, until golden-about 10 minutes. Add sugar, then cook for 1 more minute. Serve with sugar and lemon juice.
