Ingredients

1 ½ lbs Kale, coarsely chopped

3 Tbl Olive Oil

2 Garlic cloves, finely sliced

½ Cup Vegetable stock

Salt and pepper

2 Tbl Red wine vinegar

Preparation

Heat olive oil in large saucepan over medium high heat. Add garlic and cook until soft, but not colored. Raise heat to high, add stock and kale and toss to combine. Cover and cook for five minutes. Remove cover and continue to cook, stirring until all liquid is evaporated. Season with salt and pepper to taste. Add vinegar.
