Ingredients

1 pound (16 to 20 per pound) large prawns, peeled & deviened.

Cracked black pepper to taste

Papaya Cumin Cilantro Sauce:

1 large ripe papaya

2 ounces lime juice

2 ounces orange juice

1 ounce water

1 tsp ground cumin

1/2 red bell pepper, minced

1/4 bunch cilantro, chopped

Curried Couscous:

2 cups dried couscous

2 cups water

1 tsp curry powder

Cracked black pepper to taste

Preparation

Curried Couscous:

  1. Bring the 2 cups of water and curry powder to a boil.
  2. Add couscous, cover and remove from heat.
  3. In approximately eight minutes the couscous will be hydrated, cooked and firm.

Papaya Cumin Cilantro Sauce:

  1. Puree papaya meat, lime juice, water and cumin in a blender until smooth and silky.
  2. Pour into a bowl and stir in cilantro, cumin, red pepper and cracked pepper to taste.s

Prawns:

  1. Season prawns with cracked pepper and sear both sides in a non-stick pan until just underdone.
  2. Fluff couscous with a fork and spoon some on a plate. Pour sauce around and top with sauteed prawns.
