Ingredients

Cooking spray

2 (6oz) packages fresh baby spinach

1/4 tsp kosher salt

1/4 tsp freshly ground black pepper

1/4 c (1oz) crumbled goat cheese

2 tablespoons toasted pine nuts

Preparation

  1. Heat a large skillet over med high heat. Coat pan with cooking spray. Add spinach to pan, cook 2 mins stirring often. Stir in slat and pepper. Cook 2 to 3 mins or until spinach is wilted, stirring often. Top with cheese and pine nuts and serve immediately.
