Ingredients

3-4 tbsp olive oil

1 small yellow onion, diced

5 garlic cloves

1 1/2 lbs grape tomatoes

2 tbsp fresh parsley, minced

1/2 tsp red pepper flakes

1/4 cup chopped mixed fresh herbs (oregano, thyme, chives, tarragon)

salt

Preparation

  1. Set garlic cloves on foil, drizzle 1-2 tbsp of olive oil, wrap securely. Roast in 375 degree oven until tender, 20-30 minutes. Let cool, save oil

  2. HEat 2 tbsp olive oil in large skillet over med heat. Add onion and roasted garlic (Pinched from skins), stirring often for five minutes until onion is tender. Add tomatoes, parsley and pepper flakes. Increase heat to med-high and saute, stirring occasionally for 3 minutes until some tomato skins begin to split.

  3. REmove from heat. Sprinkle with the garlic oil, mixed herbs and salt.

Serve immediately
