Ingredients

1 large zuchini

1 garlic clove sliced

1-2 TB olive oil

1 TB unsalted butter

Freshly ground black pepper (to taste)

2 TB parmesan cheese

1 TB julienned basil (for garnish)

Preparation

Slice your zucchini 1/4 inch thick. No need to peel. Set aside. In a non stick pan melt butter and oil. Infuse your oil with garlic on med-low heat. When the garlic is fragrant and brown (not burned) remove from it oil and discard. Sautee 4 or 5 slices of zucchini at a time in garlic oil. Sprinkle lightly with pepper and brown on each side . When your zuchini is cooked through serve with a sprinkle of parmesan cheese and basil. It’s really easy, but amazingly flavorful! Enjoy!
