Ingredients

3 1/2 oz mild blue cheese

3 T. butter at room temp.

1/2 c. rice flour

1/3 c. almond flour

2 T corn starch

1/4 t. coarse salt

1/8 t. black pepper

Preparation

*Combine blure cheese and butter in a food processor; pulse until thoroughly blended. *Add rice flour, almond flour, corn starch, salt and pepper and pulse until ingredients come together in a ball. *Place dough on wax paper, flatten into a disc and chill for 30 minutes or up to one day.

  • Preheat oven to 325, line a cookie sheet with parchment
  • Roll dough to 1/4 inch thickness and cut into shapes with cookie cutters. Place on cookie sheet.
  • Bake 10 - 12 minutes or until edges turn golden. Cool on a wire rack before serving or freezing.
