Ingredients

1 lb breakfast sausage

3 cups frozen shredded hash brown potatoes

1/4 cup butter, melted

12 oz cheddar cheese, shredded

1 onion, diced

16 oz cottage cheese

6 eggs

Preparation

  1. Preheat the oven to 375 degrees.
  2. Lighly grease a 9X13 inch baking dish.
  3. Cook sausage in a large deep skillet over medium-high heat until browned. Drain, crumble & set aside.
  4. In the dish, stir together the shredded potatoes & butter. Line the bottom & sides of the baking dish with the mixture.
  5. In a bowl, mix together sausage, cheddar cheese, onion, cottage cheese & eggs. Pour over the potato mixture. Bake 1 hour or until a toothpick inserted into the center comes out clean.
