Ingredients

1 container mushroom caps (button or baby ‘bellas) cleaned

1 can cooked white chicken breast, drained

1 small scallion, sliced

1/2 brick cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup breadcrumbs

1/2 tspn garlic powder

2TBspn worsteshire sauce

dash pepper & dried parsley for garnish

spray oil/cooking spray

Preparation

Trim stems of mushrooms, remove Place caps (tops down) on lightly oiled cookie sheet. Broil for about 5-10 minutes, until they just start to darken. Meanwhile… Combine chicken and sliced mushroom stems with softened cream cheese until smooth. Add garlic powder and worsteshire. Fold in scallion and shredded cheese. Mixture should be chunky and thick. Spoon generous amount of mixture into caps. Sprinkle with breadcrumbs. Spritz with oil/cooking spray, and top with dash of pepper & parsley. Broil for another 10-15 minutes until golden and bubbly. Serve.
