Ingredients

1 lb. cod (1/2 lb per person)

1/4 c. extra virgin olive oil

4 cloves garlic, sliced thinly

1 can diced tomatoes (28 oz)

1/3 lb pitted cured black olives * see note above

1 1/2 t assorted dried herbs such as herbes de provence, thyme, oregano, basil…

fresh ground pepper to taste

Preparation

gently wash fish in cold water, pat dry with paper towels. heat olive oil over medium heat in med/lg. stainless brasier or dutch oven that can be covered and transfered to oven from stove top. add garlic and tomatoes with juice and reduce for 3-4 minutes. stir in olives and herbes. pepper to taste. turn off heat. when ready to place in oven, gently place cod fillets on top of tomato/olive mixture. drizzle top of fish with olive oil. cover and place in oven. bake 12-15 minutes. serve immediately. i like to serve over rice, preferably a nutty brown rice blend.
