Ingredients
3 zucchini cut into slices
3 scallop squash cut into slices
3 crookneck squash cut into slices
4 roma tomatoes cut into chunks
4 garlic cloves cut into small slices
1 bunch of green onions chopped along with some of the green stems.
3 Tablespoons Extra Virgin Olive oil
3 Tablespoons chopped fresh basil
1/2 teaspoon crushed fennel seeds
1 1/2 pounds sweet Italian sausage (optional)
Preparation
If you are going to add the sausage, cook if first. I like to cut it into good sized chunks and simmer in a little olive oil to coat the pan until done.
Slice all of the squash, tomatoes, garlic cloves onions and fresh basil. Crush the fennel. Heat the olive oil in a large skillet and add all ingredients and simmer until squash is almost tender and then add the fresh basil and finish cooking.
