Ingredients

MEAT SAUCE:

2T- Olive Oil

1-Med. Onion diced

1-Carrot diced

2T-Prepared Garlic

1#-Ground Beef

1/2#-Ground Pork

35oz-Prepared Spaghetti Sauce

35oz-Diced Tomatoes

1/2C-Dry Red Wine

1t-Salt

1t-Black Pepper

CHEESE SAUCE:

1/2C-Half’n’Half

1.5#-Riccotta

1/4#-Parmesan

2-Eggs

1t-Salt

1t-Pepper

1/4C-Italian Seasoning

1#-Mozzarella

18-21-Lasagna Noodles

Preparation

-Heat water for noodles. -Pre-heat oven to 350 degrees. -Brown ground beef and pork, add wine, cook down, and reserve. -Sautee onion & carrots until soft. Add garlic and sautee a minute. -Mix beef/pork, onion/carrot, spaghetti sauce, and tomatoes together in a large pot and simmer for 20 minutes. -Meanwhile, in a large bowl, add riccotta, paremsan, half’n’half, eggs, salt/pepper, and italian seasoning. -Meanwhile, boil noodles until slightly soft, rinse, and cool. -Spread 1/3 of meat sauce on the bottom of the casserole. -Top meet sauce with noodles. -Spread 1/3 of cheese sauce over noodles. -Spread 1/3 mozzarella over cheese sauce. -Repeat with 2 more layers. -Sprinkle top layer (over mozzarella) with a little parmesan. Bake at 350 for 45 minutes to 1 hour until bubbly and golden.
