Ingredients

1/2 lb. mixed greens

(Spring Mix)

1/4 cup pine nuts

1/2 cup dried cranberries

1 can mandarian oranges

(drained)

shaved ribbons of parmesan cheese

SALAD DRESSING FOLLOWS:

Dressing

1/2 cup sugar

1 tsp. dry mustard

1 tsp. salt

1 1/2 tsp. celery seed

1 tbl. minced onion

1 cup safflower or sunflower

oil

1/3 cup white wine vinegar

Preparation

Prepare salad dressing. In medium bowl add sugar, vinegar and oil. Whisk until sugar dissolves. Add rest of ingredients. Whisking until well-blended and smooth. Chill or serve immediately. Gently wash and dry salad greens. Set out individual salad plates, 1 for each guest. Divide greens evenly amongst plates. Top each serving with pine nuts, mandarian oranges and cranberries. Using a vegetable peeler, peel ribbons of parmesan cheese on each salad. Drizzle dressing on each salad. Viola!
