Ingredients
1 cup steel cut oats
2 cups water or low sodium vegetable broth
1 cup unsweetened soy, hemp or almond milk
2 tablespoons nutritional yeast
2 dashes turmeric
1 1/2 teaspoons Cajun, Southwest or spicy no salt seasoning of choice
dash black pepper
dash chipotle powder (optional)
1 ounce sundried tomatoes, soaked until softened and chopped
1 cup sauteed mushrooms or more if desired
2 cups fresh baby spinach or more as desired
Preparation
Add all ingredients except spinach to pot, heat to boiling, turn down to a simmer, stirring occasionally until the water is absorbed and the oats are creamy.
Stir in the spinach, take off the burner, cover and let sit a bit until the spinach is soft.
