Ingredients

Prepare 6 oz. Angel hair pasta “al dente”

2 Tbls. olive oil

1 Tsp. sea salt

1 cup finely chopped small yellow squash

2 garlic cloves, minced

1/4 cup minced onions

1/4 cup chopped fresh spinach

1/4 cup chopped fresh basil

1/4 cup pine nuts

Preparation

Heat olive oil over medium heat.

Add minced garlic and onion; saute until soft. Add squash and salt; saute until slightly carmelized. Add pine nuts and saute until nuts start to brown. Add chopped fresh spinach and basil, and saute until wilted.

Serve immediately over Angel hair pasta with warm bread and tomato/pepper salad.
