Ingredients
2 large sweet potatoes (2 lbs), sliced into 1/4 in thick half moons
2 tsp extra-virgin olive oil
1 tblsp Italian seasoning
Salt
Freshly ground black pepper
Preparation
Heat the oven to 400 degrees F. In a large bowl, toss potatoes with oil, Italian seasoning, and a pinch of salt and pepper. Spread in a single layer on two large baking sheets and bake for 10 minutes. With a spatula, turn slices over and continue baking until chips are golden, about 7 minutes longer. Serve warm.
