Ingredients

1/4 cup cilantro leaves

1 cup micro greens or thinly sliced romaine lettuce

2 ripe Avocados halved

1/4 t lime zest

1 T lime juice

1/2 t salt divided

1/4 t ground cumin

1/8 t paprika

Generous pinch of cayenne pepper

12 scallops cut in half crosswise

1 T Vegetable oil

24 tortilla chips

Preparation

  1. combine cilantro and greens and chill
  2. mash avocado and mix in lime zest, lime juice and 1/4 t salt - chill
  3. Combine cumin, paprika, cayenne pepper and 1/4 t salt- heat oil in large nonstick skillet over medium high head. sprinkle scallops on both sides with seasoning mixture and cook 1 minute on each side or until scallops are opaque
  4. Spread reserved avocado mixture evenly on tortilla chips; top with cilantro mixture; top each with a scallop
