Ingredients
2 lbs fresh large Atlantic scallops
1 medium onion, chopped
1-2 cloves of garlic, chopped
4 TBSP olive oil
Salt and freshly ground black pepper to taste
Preparation
Marinate scallops in oil, onion, garlic, salt and pepper for 1 hour. Heat BBQ to high heat. Place scallop mixture in a foil tray or similar. Also can be done on skewers (make sure to soak skewers first). Place tray on BBQ and toss while cooking. Cook for four to five minutes, or just until scallops are opaque. Remove to platter and serve!
