Ingredients

1/4 c. butter, divided

1 lb. fresh, dry bay scallops, rinsed

1 c. sliced mushrooms

3 T. white wine

1/4 c. sliced green onions

1-2 cloves minced garlic(depending on taste)

3/4 c. bread crumbs

1/2 c. chopped parsley

S & P to taste

Preparation

  1. Preheat oven to 450 degrees.

  2. Mix scallops with bread crumbs in a mixing bowl and set aside.

  3. Saute mushrooms in 2 T. butter for about 5 min., then add onions, garlic and wine and cook about 3 more minutes.

  4. Add this mixture to the scallops and bread crumbs, add parsely, salt and pepper and mix well.

  5. Turn into a greased quiche dish or 9-inch pie plate. Melt the rest of the butter and pour on top and bake for 10 minutes.

  6. Run under the broiler for a minute or two to brown and serve.
