Preparation

Peel oranges, put peels in water and change water frequently. When you decide to prepare them, estimate weight of peels and measure equal amount of sugar and add. (Consider weight of peels without water, so if they’re saturated, add less sugar.) Also add 2 Tablespoons water.

Cover all, cook for 10 minutes until the sugar melts. Uncover pot, mix very well. When all the water is absorbed, it is done.
