Ingredients

10 Egg Whites

2 Whole Eggs

1/4 cup Whole Milk

Soft Goat Cheese

Black Truffle Oil

Sea Salt

Preparation

Whisk eggs, egg whites and milk together in large bowl until well blended. Melt 2 tablespoons butter in 12-inch nonstick skillet over medium heat. Add egg mixture; cook 2 minutes without stirring. Using spatula or large spoon, gently stir and turn over portions of the egg mixture until cooked through but soft, about 4 minutes. Drizzle with truffle oil and toss with salt. Divide scrambled eggs among 4 plates. Garnish with dallops of goat cheese and serve.
