Ingredients

Mix:

6 cups all-purpose flour

1 1/2 teaspoons baking soda, check expiration date first

3 teaspoons baking powder

1 tablespoon kosher salt

2 tablespoons sugar

1/4 cup malted milk powder

Pancakes:

1 egg

1 cup buttermilk

2 tablespoons melted butter

1 cup Pancake Mix

butter, for greasing the griddle

1 cups fresh blueberries, if desired

Preparation

Combine all of the mix ingredients in a lidded container. Shake.

Pancakes are a quickbread, and should be mixed using the muffin method.

Use a #20 disher for even scooping of 4" pancakes. 3 min a side on a 350 deg griddle.
