Ingredients

1-1/2 cups all purpose flour

1/2 to 1 tsp salt

3 Tablespoons sugar

1 tablespoon baking powder

2 medium eggs

3 tablespoons melted butter

1 cup lowfat milk

1/2 tsp vanilla

1/4 tsp nutmeg or cinnamon or other spice

Preparation

  1. Begin to heat a griddle or fry pan on medium-low heat. 2.Sift or thoroughly mix flour, salt, sugar and baking powder, sugar and nutmeg or spice in a large open bowl
  2. Mix milk and vanilla in a bowl, break eggs in too and thoroughly mix
  3. Melt butter in microwave or with low heat on stove
  4. Pour milk/egg liquid into flour mix, and stir thoroughly. Add melted butter and mix thoroughly. If mixture is runny, add another 1/8 cup of flour. Do this until the batter has a little thickness to it - when you mix it the trails from your spoon should be evident and not disappear. If the mixture is too thick, add a tablespoon of milk.
  5. Pour the batter in 3"-4" circles on the griddle or pan. When bubbles form in the top that break and have some solid structure it’s time to flip them - often this can be 2-3 minutes on one side, 2 more on the other side.
  6. Serve with syrup, butter, berries, confectioners’ sugar, chocolate or other treats.
