Ingredients
Roux:
2/3 cup flour
2/3 cup olive oil
Soup:
2 cups onion chopped
1 cup celery chopped
1 green pepper,sliced(take out at end)
1/2 cup green onion tops dash of File'
4 cloves garlic, minced
1 1/2 quart(6 cups) chicken stock
24 oz V-8 juice
dash of Tabasco
2 pounds shrimp
1 pound crab meat
Preparation
Roux add flour and olive oil in a 4 cup dish Microwave on high for 6-7 minutes add chopped onion, chopped celery, green pepper slices saute on high for 3 minutes stirring Turn to low and add Green onion tops, file’, garlic,chicken stock, V-8 Juice and Tabasco-Simmer for 30 minutes. add shrimp and crab meat cook until shrimp is pink. If freezing do not add shellfish
