Ingredients
1/2 lb. shrimp, cooked
1/2 lb. crabmeat
1/2 cup cooked rice
1/2 cup diced celery
1/4 cup pimento-stuffed green olives, diced
1/4 cup scallions, chopped
1/4 cup mayonnaise
1 1/2 teaspoons lemon juice
1 1/2 teaspoons grated orange rind
1 teaspoon sugar
1/2 cup coarsely chopped mandarin orange section
3 ripe avocado, halved & seeded
Preparation
Combine shrimp and next 9 ingredients in a bowl; stir well. Stir in chopped mandarin sections. Chill. To serve, fill avocado halves with shrimp mixture.
