Ingredients
2 cups cooked & mashed pumpkin
1 cup granulated sugar
1/2 stick butter
3 eggs beaten
1/2 cup buttermilk
1 tablepoon vanilla
1 teaspoon ground nutmeg
1/4 teaspoon ground clove
1/4 teaspoon ground ginger
1 teaspoon cinnamon
1/2 teaspoon fresh lemon juice
1 pie crust (graham works well with this recipe)
Preparation
Preheat oven to 425 Mix all ingredients (Spices are optional based on personal taste) well in bowl or puree in blender and add to pie crust. Bake at 425 for 15 minutes, reduce heat to 350 and bake an additional 45 minutes let stand and serve with whip cream or pumpkin seeds.
