Ingredients
1 Butternut Squash
Salt
Pepper
Ground Cardamom
Olive Oil
Preparation
*Cut squash into bite-sized bits (about 1/2 inch cubes) *Preheat Oven to 375 degrees *Place on backing sheet *Drizzle with olive oil *Sprinkle with salt and pepper *Bake for 35 minutes or until tender *Season with ground cardamom to taste
Serve with Brown Jasmine Rice and Barley seasoned with provencial herbs, salt and pepper.
Great side for pork, chicken, or beef.
