Ingredients

Salad:

5 oz fresh spinach

1 cup cashews

1 cup of grapes (halved)

2 tsp butter

1 medium red onion

Dressing:

1/3 cup cider vinegar

1/3 cup canola oil

1/3 cup sugar

1 tbsp poppy seeds

Mustard or Hot Sauce to taste

1 pack goat cheese (crumbled)

Preparation

Mix first five dressing ingredients in a bowl and whisk. Once mixed, add crumbled goat cheese.

Put spinach and halved grapes into salad bowl.

Slice onion into thin rings. Melt 1 tsp of butter in a skillet over medium high heat. Once melted, added onion and caramelize.

Melt butter in skillet over medium high heat. Once hot, toast cashews until brown – stirring frequently.

Pour dressing over spinach grape mixture and toss.

Place spinach grape mixture into serving bowls. Place some toasted cashews and caramelized onion onto each serving.

Serve immediately.
